During the colder, shorter late fall and winter months, I like to meal prep some soups, stews and chilis.
I make them more than I need, eat some, and freeze whatever is left for later because no one needs to eat chili for 10 days straight.
Well, maybe if it’s THIS chili.
Celebrated by millions of people all over the world every autumn, Diwali is the Hindu festival of lights and symbolizes the victory of light over darkness. The festival spans over five days, coinciding with the Hindu lunar calendar and generally falls between the end of October to early November.
The third day is the darkest night and the most important. It’s believed that the goddess Lakshmi enters the home and blesses it with wealth and good fortune. On this day, people light candles and fill the streets with sparklers and fairy lights. After worship, families come together to exchange gifts.
Tres Leches cake is a sponge cake made with three (tres) milks: evaporated milk, sweetened condensed milk, and cream—a heavy hitter in the dairy department and not for the faint of heart. The sponge cake is prepared and baked separately, and then sweet combination of milks is poured into the baked cake and allowed to soak overnight.
The result is decadent.
It’s downright indulgent.
