Colavita Challenge at Food and Finance High School: Round Two

Remember home economics class? Perhaps if you enjoy cooking, you have fond memories of making basic dishes such as biscuits, baked chicken and pasta for one school period, in perhaps your sophomore or junior year of high school. While for many schools across the U.S., home economics class is more of a thing of the past, Food and Finance High School in Manhattan takes it a step further by offering a rigorous professional culinary program to its curriculum. Students learn kitchen basics such as knife skills, safety and sanitation, and eventually progress to preparing and developing more complex recipes throughout their entire high school education. It is the only culinary high school in New York City and is tuition-free.

SWEATER WEATHER CHILI WITH COLAVITA DICED TOMATOES

ANDA BHURJI

Celebrated by millions of people all over the world every autumn, Diwali is the Hindu festival of lights and symbolizes the victory of light over darkness. The festival spans over five days, coinciding with the Hindu lunar calendar and generally falls between the end of October to early November.

The third day is the darkest night and the most important. It’s believed that the goddess Lakshmi enters the home and blesses it with wealth and good fortune. On this day, people light candles and fill the streets with sparklers and fairy lights. After worship, families come together to exchange gifts.

DAY OF THE DEAD PUMPKIN SPICE TRES LECHES CAKE

Tres Leches cake is a sponge cake made with three (tres) milks: evaporated milk, sweetened condensed milk, and cream—a heavy hitter in the dairy department and not for the faint of heart. The sponge cake is prepared and baked separately, and then sweet combination of milks is poured into the baked cake and allowed to soak overnight.

The result is decadent.

It’s downright indulgent.
