Novello – Italian for “new” – is the name given to extra virgin olive oil pressed from the first olives picked during the Fall Harvest. The olives have not reached full maturity and maintain the full fragrance and strength of the fruit. The taste -- mildly spicy and slightly bitter -- leaves a robust and lingering flavor in the mouth. The aroma captures the essence of freshly-pressed olives. Novello oil is unfiltered and appears just as it pours from the mill. The taste, texture and aroma are simply enthralling!

To preserve the immense personality of this oil, use Novello as a finishing oil. Or, appreciate Novello as a dipping oil paired with a warm, crusty baguette.

Recipe Suggestion:
Escarole and Bean Soup

During the colder months, olive oil will congeal during shipping. This is normal, natural, and will not disturb the quality of the oil. Please allow congealed oil to rest at room temperature for 24 hours.
