Chocolate Chip Pancakes
"I'm in training to become a dietician so I'm very conscious about what we eat at home. My husband has high cholesterol so I try to limit animal fats such as butter in our diet. I make a lot of 'experimental dishes' because of this. My husband is wonderful because he will try anything but he definitely tells me when one of my dishes is a keeper or if it's not. He loves chocolate chip pancakes; in this recipe I replaced butter with olive oil. This one is a keeper. And as a future nutritionist and food lover I can say replacement of butter in this recipe is ideal for taste and health."
Ingredients:

3 tablespoons COLAVITA Extra Virgin Olive Oil, plus more for the griddle
3 large eggs
2 1/2 cups milk
2 teaspoons vanilla extract
3 cups all-purpose flour
4 tablespoons sugar
1 tablespoon baking powder
2 teaspoons salt
1/2 cup semisweet chocolate chips


Preparation:


1. In a mixing bowl add the olive oil, eggs, milk and vanilla extract. Whisk together and set aside. 2. In the second mixing bowl stir together the flour, sugar, baking powder and salt. 3. Add the wet ingredients to the bowl with the flour mixture. Mix until just incorporated. (The batter does not have to be completely smooth, so don't over mix.) 4. Set the batter aside. 5. Set your griddle over a medium heat (you can use a single burner, or two). 6. Take a paper towel and spread olive oil around the entire griddle. (You only want a light coating of oil.) 7. Heat the pan for a few minutes on medium. 8. Fill a ladle with the pancake mixture batter and spoon onto the pan. 9. Sprinkle some of the chocolate chips on to the pancake. 10. When bubbles start to appear all over the top of the pancake, flip the pancakes over. 11. Do not flatten the pancake down after flipping. Cook until the bottom is golden brown.  Serves 4 - 6
