Grab and Go Bran Muffins
"Most working adults are on-the-go in the morning. It's easy to pack a muffin to microwave at work and enjoy with coffee or juice. This recipe is healthy with nuts, olive oil, bran, fruit and dairy. And it stores well in the refrigerator.
Ingredients:

1/2 box raisin bran cereal (10 ounces)
1 1/4 cups sugar
2 1/2 cups flour
2 1/2 teaspoons baking soda
1 1/4 teaspoons salt
1 teaspoon cinnamon
1 teaspoon ground ginger or all-spice
1/2 cup walnuts, chopped and toasted
2 cups buttermilk
10 ounces canned crushed pineapple, drained
2 eggs, lightly beaten
1 egg white
1/2 cup COLAVITA Extra Virgin Olive Oil


Preparation:


1. Preheat oven to 350 degrees. 2. Pour all ingredients into a large bowl and mix well. 3. Bake in large muffin tins coated with olive oil. Fill each tin 3/4 full. Bake 30-35 minutes or until toothpick inserted in the center comes out clean. Cool and remove from tins. Refrigerate in airtight container and serve cold, warm or hot. Makes 2 dozen muffins
