Virginia's Best Ham Biscuits
"What would Mama say?? If she caught me making homemade Southern Style Biscuits with Colavita Extra Virgin Olive Oil instead of butter? She'd say 'Give me the recipe, but don't tell your Father.'"
Ingredients:

FOR  THE BISCUITS:
1 3/4 cup all-purpose flour
1/2 teaspoon salt
3 teaspoons double-acting baking powder
4 tablespoons COLAVITA Extra Virgin Olive Oil
3/4 cup milk
3 tablespoons grated Parmesan cheese
1/8 pound ham, preferably Smithfield Ham,  chopped into small pieces
FOR THE FILLING:
6 tablespoons COLAVITA Extra Virgin Olive Oil
1 tablespoon fresh parsley, chopped
1 tablespoon fresh basil, chopped
1 tablespoon fresh chives, chopped
12 thin slices ham, preferably Smithfield Ham


Preparation:


1. Preheat oven to 450 degrees F. 2. In a mixing bowl, combine the flour, salt and baking powder. 3. Add olive oil; stir with a fork until just incorporated into flour -- do not over mix. 4. Add the milk, Parmesan cheese and chopped ham; stir until combined.  5. Turn dough out onto a lightly floured board; using a lightly floured rolling pin, roll out to 1/4 inch; cut with a large round biscuit cutter.  6. Place biscuits, about 2 inches apart, onto an ungreased baking sheet; bake until lightly browned--12 to 15 minutes. 7.  Meanwhile, in a small bowl, combine the olive oil, parsley, basil and chives.  8. When biscuits are done, remove from oven and allow to cool slightly.  When cool enough to handle, cut them in halves; drizzle the inside of each half with the olive oil mixture and make sandwiches using a ham slice.  Serve while still warm. Yields 12 biscuits.
