Citrus Celebration Cake

"To reduce the family's fat in our diet I decided to try replacing the butter in baked goods with extra virgin olive oil. This is the family's favorite cake that I've created using olive oil rather than butter. I also use it for bake sales, pot luck dinners, and other special occasions."
Ingredients:

2 1/4 cups cake flour
1 1/2 cups sugar
1 Tbsp. baking powder
1 tsp. lemon peel
1 tsp. orange peel
3/4 cup orange juice
1/2 cup plus 1 tsp COLAVITA EXTRA VIRGIN OLIVE OIL
6 eggs, separated
1/2 tsp. orange extract
Glaze:
1 1/4 cups powdered sugar
1/4 cup lemon juice
1/4 tsp. lemon extract
Garnish-orange and lemon peels


Preparation:


1. In a large bowl combine the flour, sugar, baking powder and peels. 2. In another bowl beat together the orange juice, 1/2 cup olive oil, egg yolks and extract. 3. Stir into the flour mixture. 4. Beat the egg whites till stiff peaks form. 5. Fold into batter, then pour into an oiled 10 inch tube pan. 6. Bake at 325 degrees 1 hour or till the cake tests done. 7. Cool, then unmold. 8. To make the glaze, place all the ingredients plus the 1 tsp. olive oil in a small saucepan. 9. Bring to a boil and simmer 3 minutes, then spoon over the cake. 10. Garnish.
