Celestial Crostini
Serves:4
"To help reduce the fat in the family's diet I decided to stop spreading butter on bread for sandwiches. This gave me incentive to create more interesting sandwiches using extra virgin olive oil. This is a family favorite and can also be used as an appetizer for dinner."
Ingredients:

1 loaf of french bread sliced into 1/2 inch pieces
1/4 cup COLAVITA Extra Virgin Olive Oil, divided
2 cloves garlic, minced
2 tablespoons chopped roasted red bell peppers
2 tablespoons minced Italian parsley
2 tablespoons chopped black olives
2 tablespoons grated Parmesan cheese


Preparation:


1. Scoop out a hollow from the top of each bread slice; crumble up the scooped out bread. 2. Heat 2 tablespoons of the olive oil in a small skillet; add the garlic and breadcrumbs, cooking over medium heat till garlic softens and bread crumbs are golden brown, about 3 minutes.  3.  Remove pan from heat and add the rest of the ingredients. 4.  Brush each piece of bread with the remaining olive oil.  5. Spoon the bread mixture into each hollow. 6. Place crostini on an oiled baking sheet and bake at 375 degrees for 10 minutes. Makes 16
