Shroom and Shallot Chicken Pasta
"This is one rockin' pasta dish. Keep it covered in order to yield extra liquid for your pasta. You could pour the sauce over the pasta and bake it in the oven, adding a soft grated cheese to the top for an extra beat."
Ingredients:

2 tablespoon COLAVITA Extra Virgin Olive Oil
2 cloves garlic, finely chopped
2 shallots, chopped
1 pound boneless skinless chicken breasts, sliced
1 teaspoon pure ground chilies
1/4 pound shitake mushrooms, thinly sliced
1/4 pound white button mushrooms, thinly sliced
1 teaspoon Johnny Ciao's Rockin' Poultry (or 1/2 teaspoon ginger powder and 1/2 teaspoon celery powder)
1 rosemary sprig
1 pound COLAVITA PASTA of choice, cooked and drained


Preparation:


Heat olive oil in a large skillet over medium heat. Add garlic and shallots and saute 1 minute. Add sliced chicken and cook, turning, until brown on all sides, about 5 minutes. Reduce heat and add ground chilies, mushrooms and Johnny Ciao's Rockin' Poultry Mix. Cover and cook 5 minutes, then add rosemary and cook 3 minutes or until chicken is tender. Pour sauce over pasta in a large bowl and toss to combine.Makes 4 to 6 servings
