Salmon Basilico

Ingredients:

2  tablespoons COLAVITA Extra Virgin Olive Oil
2 cloves garlic, minced
2 teaspoons capers, minced
4 Roma tomatoes, peeled and chopped
1 teaspoon Johnny Ciao's Opera Mix (or 1/2 teaspoon dried oregano and 1/2 teaspoon dried basil)
1/2 pound oyster mushrooms, thinly sliced
1 pound salmon fillet
6 to 8 fresh basil leaves, chopped
1 pound COLAVITA Spaghetti, cooked according to package directions


Preparation:


Heat olive oil in a large skillet over medium heat. Add garlic and capers and saute 1 minute. Add tomatoes, Johnny Ciao's Opera Mix and mushrooms. Cook over medium heat 3 minutes. Place salmon in pan, skin side up. Reduce heat, cover and cook 5 minutes or until salmon turns from translucent to opaque. Remove salmon skin with a fork; add basil. Break up salmon into large chunks, blending with sauce. Pour sauce over pasta in a large bowl and toss to combine.  Make 4 - 6 servings
