Pasta Alla Gratte
"This is a classic Neapolitan dish that my dad, Pasquale, prepares, whenever he's allowed in the kitchen. Mom has a thing about letting anyone cook in her kitchen, except me, of course."
Ingredients:

1 pound COLAVITA Rigatoni pasta, cooked according to package directions, 1/4 cup pasta water reserved
1/4 cup COLAVITA Extra Virgin Olive Oil
2 medium onions, chopped
3 eggs, lightly beaten
1 cup (4 - ounces) shredded mozzarella cheese
2 tablespoons grated Romano cheese
10 flat-leaf parsley sprigs, leaves only, chopped
4 ounces prosciutto, chopped


Preparation:


1. Preheat oven to 375F (190C).
2. Grease a deep medium baking dish. Turn pasta into prepared dish.
3. Heat olive oil in a large skillet over medium heat. Add onions and saute 3 minutes or until softened. Add reserved pasta water; slowly stir in eggs; don't scramble. Remove mixture from heat.  Stir in cheeses, parsley and prosciutto. Pour egg mixture over pasta and gently stir to combine. Bake 30 minutes, gently stirring several times, or until heated through. Let cool 5 minutes, then serve. Makes 4 to 6 servings
