Greater Potato Gratin
Ingredients:

1 garlic clove (peeled and bruised)
2 pounds Yukon Gold potatoes (peeled and placed in water)
Salt and freshly ground pepper
1 tablespoon chopped fresh thyme (optional)
1 cup shredded Gruyere cheese
2 1/2 tablespoons COLAVITA Extra Virgin Olive Oil
1/2 cup heavy cream
1/2 cup homemade or low-salt chicken broth


Preparation:


1. Preheat oven to 325 degrees.2. Rub garlic on bottom and sides of 2 quart (14 x 8) ovenproof dish.3. Slice potatoes into 1/16 inch slices. There will be 3 layers of potatoes.4. Overlap slices on bottom of dish to form first layer. Season with some salt, freshly ground pepper, 1/3 of herbs, 1/3 of the cheese; drizzle with 1/3 of cream and 1/3 of the olive oil. Repeat for the remaining two layers.  5. Pour broth over top and bake for 1 1/2 hours. After 45 minutes, baste top layer with juices from pan. Serve warm. Makes 6 - 8 Servings.
