Vegan Devil's Food Cake
"This is a good anytime snack. But is a delicious quick breakfast served with fresh fruit."
Ingredients:

1 1/4 cups sifted flour
1 1/2 cups sugar
1/2 cup cocoa
1 teaspoon salt
1 1/4 teaspoons baking soda
1 cup water
1/2 cup COLAVITA Extra Virgin Olive Oil
1 teaspoon pure vanilla extract
2 to 3 small ripe bananas, mashed
2 cups walnut halves
Powdered sugar


Preparation:


1. Preheat oven 350 degrees. Lightly coat the bottom of a glass or nonstick pan with Colavita Extra Virgin Olive Oil. 2. Sift together flour, sugar, cocoa, baking soda and salt in a large bowl. 3. In a medium sized bowl, mix together water, vanilla and olive oil. Beat 3 minutes at medium speed with electric mixer. Add mashed bananas and beat an additional minute. Stir in walnut haves. Bake approximately 30 to 35 minutes. Makes 10 - 12 servings
