Madalyn's Shrimp Diablo w/ Mediterranean Couscous

For a cute presentation; when plating set two shrimp upright so they look like the horns of the devil.
Ingredients:

1/4 cup COLAVITA Extra Virgin Olive Oil, divided
30 raw shrimp 21/25, peeled and deveined, tail on
1 cup diced red onion
5 cups diced plum tomato
5 cups diced red bell pepper
6 cloves garlic, chopped
4 tablespoons hot sauce,  Texas Pete Hot Sauce preferred
2 tablespoons fresh lime juice
1 cup tomato paste
1/4 cup strong black coffee
1 1/2 cups uncooked couscous
1/3 cup chopped cilantro


Preparation:


1.Heat 2 tablespoons in a large saute pan; add all the ingredients in the order listed (shrimp through strong coffee), waiting about 45 seconds between each addition.  2. Saute for approximately for 3 or 4 minutes being careful not to overcook the shrimp. 3.  Meanwhile, prepare the couscous according to package directions.  When done, add cilantro and remaining olive oil; fluff with fork.  4.  Place shrimp on couscous; spoon sauce over and serve.
