Nut Crusted Pear 'N Honey Crumble
Serves:6
Ingredients:

3 Tbsp. COLAVITA EXTRA VIRGIN OLIVE OIL, divided
3 1/2 pounds firm, ripe Anjou pears, peeled, cored and cut into thin slices
2 Tbsp. fresh lemon juice
1/2 cup baking raisins
2/3 cup honey
2 Tbsp. all purpose flour
3 Tbsp. chopped crystallized ginger
2/3 cup packed golden brown sugar
1/4 cup raw sliced almonds
1/2 cup walnuts, coarsely chopped
3 cups Vanilla Ice Milk, slightly softened, mixed with 1 teaspoon instant expresso powder


Preparation:


1. Position rack in center of oven and preheat oven to 350 degrees. Lightly brush a 13x9x2 inch baking dish with 1 tablespoon COLAVITA EXTRA VIRGIN OLIVE OIL. Set aside. 2. In a large mixing bowl toss pear slices with lemon juice, raisins, honey, 2 tablespoons flour and crystallized ginger to blend. Let stand 15 minutes. Transfer mixture to prepared baking dish. 3. In a medium mixing bowl, combine brown sugar and remaining 2 tablespoons flour. Stir in remaining 2 tablespoons Colavita Extra Virgin Olive Oil, almonds and walnuts until blended. Sprinkle mixture evenly over pear mixture. Bake 30 minutes in 350 degree oven until juices bubble thickly. Let stand 10 minutes. Serve warm with a dip of expresso ice-milk.
