1. Preheat oven to 350 degrees. Lightly spray a 9 x 13 inch baking pan. 2. Mix sweet potatoes and sugars. Beat in eggs, one at a time. Add olive oil and beat until well mixed. Add water, cranberries and walnuts. 3. Sift together all dry ingredients. 4. Add to liquids all at once and mix until well blended. 5. Pour into prepared pan and bake 35-40 minutes or until a toothpick when inserted comes out clean. 6. Cool and dust with confectioners' sugar. Serves 12
