Mincemeat Cake
Ingredients:

1 pound mincemeat
1 cup nut meats
1 cup raisins
1 teaspoon vanilla extract
1/2 cup COLAVITA Extra Virgin Olive Oil
1 cup granulated sugar
2 egg yolks (reserve whites)
2 egg whites-stiffly beaten
2 cups flour
1 teaspoon baking soda
1 teaspoon water


Preparation:


Preheat oven to 325 degrees F.  In a large mixing bowl, combine all the ingredients in the order given. Bake in greased and floured tube pan at 325 degrees F for one hour. Makes a three pound cake.
