| My Mother's Tuesday Night Meatball Soup |

| The first time I made this soup for myself I was amazed how much it tasted like my mother's. My sister Beth Anne, the family soup expert, who rarely misses a Tuesday night at my mother's, concurred. I would never consider making this soup with anything but alphabet-shaped pasta, but you could use orzo, acini di pepe or some other tiny pasta shape if you can't find alphabets. |

Ingredients:
Meatballs 1/2 pound lean ground beef 1/4 cup bread crumbs 1/2 cup (loosely packed) finely chopped Italian parsley leaves 1 egg 2 tablespoons grated Romano cheese 1/2 teaspoon kosher salt Freshly ground black pepper ------------------------------- 1 quart low-salt chicken broth 1 quart water 3 large carrots, peeled and sliced 2 celery ribs, trimmed and sliced 1 1/2 pounds chicken pieces, skin removed 1 cup alphabet pasta or COLAVITA Soup Shells 1 cup diced fresh or canned Italian tomatoes Salt and freshly ground pepper, to taste 8 tablespoons Romano cheese, or as needed

Preparation:
Make the Meatballs - combine all the meatball ingredients in a large bowl. Mix thoroughly. Form into 3/4 inch meatballs, rolling them between your palms. Refrigerate until needed. Make the soup - In a large pot or Dutch oven, bring the broth, water, carrots and celery to a boil. Add the chicken pieces; reduce the heat to a simmer and simmer until the chicken is cooked, about 40 minutes, skimming the surface occasionally. Remove the chicken to a plate and allow to cool. When the chicken is cool enough to handle, remove the meat from the bones. Shred fine. Add the pasta to the soup along with the tomatoes, meatballs and shredded chicken. Simmer until the pasta is tender and the meatballs are cooked through, about 6 minutes. Taste and adjust seasonings. Ladle into bowls passing the cheese separately.
