Bocci di Ricotta (Ricotta Fritters)
Origin: Italian
Ingredients:

1 lb. ricotta
3 Tbsp. sugar
1 egg
Oil for frying
3/4 cup plain bread crumbs
1/8 tsp. cinnamon
Breadcrumbs for dredging
1 egg beaten with 1 Tbsp. water


Preparation:


Blend ricotta, sugar, eggs, 3/4 cup breadcrumbs and cinnamon. Form into 24 balls. Roll in breadcrumbs, egg and then in bread crumbs again. Deep fry in oil until golden brown. Serve warm as a side dish or sprinkle with powdered sugar to serve with coffee.
