Biscotti di Vino (Wine Biscuit)

Wonderful taste and aroma.  Make plenty, they will go quickly!
Wine Suggestion:  Chardonnay

Ingredients:

2 1/2 cups unbleached flour
1/3 cup sugar
1 1/2 teaspoons coarsely ground pepper
1 1/2 teaspoons baking powder
1/2 cup COLAVITA Extra Virgin Olive Oil
1/2 cup dry white wine


Preparation:


In a food processor or mixer, blend flour, sugar, black pepper and baking powder. As mixer is running, add oil and wine slowly. Blend until the mixture forms a dough. Remove the dough and place on a floured board or work surface. Knead dough till it is nicely formed, about 5 minutes. Allow to rest for ten minutes. Divide the dough into 30 pieces.  Roll each piece into a 3" long rope; press the ends together to form a ring.  Arrange 1 1/2" apart on an ungreased baking sheet. Bake in batches in the middle of a 350 degree F oven for 20-30 minutes, or until bottoms are golden brown. Cool on a rack for 5 minutes.
