Cannoli

Origin: Italian
Ingredients:

SHELL:
1 1/3 cups flour
Pinch of salt
White wine (sweet or dry)
1 Tbsp. shortening
1/2 tsp. sugar
Oil for frying
RICOTTA FILLING:
1 lb. ricotta
1 Tbsp. orange peel, cut fine
2 Tbsp. sugar
2 Tbsp. chocolate chips
2 1/2 Tbsp. creme de cacao or any other liqueur


Preparation:


Shell:
Mix flour, shortening, salt and sugar. Add enough wine to make a stiff workable dough. Roll into ball and let it stand for about 1 hour. Roll out dough 1/8" thick. Cut into 5" squares. Place cannoli tube across the corners of the square. Fold one corner around the tube, then the other and press together. Fry in deep oil, one at a time, until golden brown. Remove cannoli carefully and let cool before filling.
Ricotta Filling Cream:
Add chocolate chips, orange peel, creme de cacao and sugar, mixing well. Fill shells with filling. Sprinkle with confectioners sugar.
