Spinach and Ricotta Balls
Origin: Italian
Ingredients:

2 cups cooked spinach, well drained and chopped
1 egg, lightly beaten
1/2 pound ricotta cheese
1/2 cup grated Parmesan cheese
Salt and freshly ground pepper, to taste
1/4 cup flour
1 1/2 cups COLAVITA Marinara Sauce
3 tablespoon grated Parmesan cheese


Preparation:


In a large bowl combine the spinach, egg,  ricotta, parmesan, salt and pepper.  Mix well.  Shape into balls (1 heaping tablespoon of the mixture); roll each in flour and drop (about 5 at a time) into 3 quarts of boiling water.  When the balls float to the top, boil for 5 minutes.  Lift balls out gently with a slotted spoon; place in a serving dish.  Repeat until all the balls have been cooked.  Heat the marinara sauce and pour over, sprinkle with additional cheese.  Makes 4 servings
