Preparation:
Cook zucchini in boiling water for 5 minutes, drain. Let cool, cut zucchini in half lengthwise, scoop out pulp leaving 1/4" shell. Place shells in a lightly oiled 13"x 9"x 2" baking pan. Mash pulp, drain well and set aside.Remove casing from sausage. Cook sausage, onion, and garlic in a skillet until sausage is browned stirring to crumble sausage. Drain fat. Combine sausage mixture, pulp, bread crumbs and cheese. Mix well. Spoon mixture into shells. Bake at 350 degrees for 10 minutes or until zucchini is tender. Sprinkle with mozzarella cheese and bake an additional 5 minutes. Serves 4.
