Holiday Olive and Tuna Salad
Origin: Italian
Ingredients:

3 containers COLAVITA Crushed Olives (or 1 pound pitted Italian style green olives)
1 can tuna packed in oil
1 cup raisins
1 cup diced celery
1/2 cup diced onion
1/2 cup capers, rinsed and drained
1/2 cup toasted pecan pieces, (optional)
1/4 cup COLAVITA Extra Virgin Olive Oil, or as needed
2 tablespoons COLAVITA Red or White Wine Vinegar, or as needed
1 tablespoon sugar
1 bay leaf
Salt and pepper, to taste.


Preparation:


Place all the ingredients into a large bowl; toss to coat well.  Refrigerate until time to serve.  Make 6 - 8 servings.
