| New Year's Eve Lentils with Cotechino |
| In Italy it is a New Year's Eve tradition to eat lentils with either zampone or cotechino. It is said that the pork represents the richness of life in the coming year; the lentils are coins. Zampone can be difficult to find in the U.S. so our recipe uses cotechino, which is similarly spiced and more widely available. Happy New Year! |

Ingredients:
2 pounds Cotechino sausage 1 pound brown lentils 1 small onion, diced fine 1 small carrot, diced fine 1 stalk celery, with leaves, diced fine 1/4 cup COLAVITA Extra Virgin Olive Oil 3 cloves garlic, minced Salt and freshly ground pepper, to taste 2 to 3 teaspoons fresh lemon juice

Preparation:
1. Place the cotechino in a large pot or kettle; cover with water; add 1 tablespoon kosher salt to the water; bring to a boil then reduce the heat and simmer until the sausage is cooked through, about 30 to 45 minutes. 2. While the sausage cooks, prepare the lentils. Rinse the lentils under cold running water, picking out any debris. Place in a 4 to 5 quart pot and cover with cold water. Add the onion, carrot and celery. Bring to a boil; reduce the heat to a simmer and cook until the lentils are tender, about 30 minutes. 3. When the cotechino is cooked, remove to a cutting board and cut into 1/2 inch rounds. 4. Drain all but a few tablespoons of cooking liquid from the lentils, then stir in the olive oil and garlic; season to taste with salt, pepper and lemon juice. 5. To serve; spoon the lentils into the center of a serving platter and surround them with the sliced cotechino.
