Colavita Raspberry Vinaigrette
This dressing is especially good when served over a spring mix of baby greens or spinach with sliced fresh strawberries and topped with some toasted almond slices.

Ingredients:

1/3 cup COLAVITA Raspberry Vinegar
1 1/2 teaspoons Dijon mustard
1 teaspoon sugar
1 to 1 1/2 teaspoons minced fresh thyme
3/4 cup COLAVITA Extra Virgin Olive Oil
Salt and freshly ground pepper, to taste


Preparation:


In a small bowl, whisk together the vinegar, mustard and sugar.  Add the thyme; then slowly add the olive oil, whisking until emulsified.  Season to taste with salt and pepper.  Makes 1 cup.
