| Mediterranean Chickpea Salad |

| We all know that a Mediterranean diet is one of the most healthful you can enjoy. With an abundance of fresh ingredients, legumes, and extra virgin olive oil, it's a delicious way to keep your heart "healthy". Try this as a side to some grilled chicken or fish, or put in onto a mound of lettuce and enjoy a vegetarian lunch. |

Ingredients:
2 cups cooked garbanzo (chickpeas) preferred; or 1 (15 1/2 ounce) can, rinsed and drained 2 cups diced cucumber, peeled and seeded 1 pint grape tomatoes (or cherry tomatoes) halved 1/4 cup diced red onion 1/4 - 1/2 cup crumbled feta cheese 2 - 3 tablespoons minced fresh parsley 1 teaspoon fresh minced mint, optional 1/2 cup COLAVITA Extra Virgin Olive Oil 1/4 cup COLAVITA Red Wine Vinegar Salt and freshly ground pepper, to taste

Preparation:
Mix the first 6 ingredients, along with the mint, if using, together in a large bowl. Mix the oil and vinegar together, season with salt and pepper. Pour enough dressing on salad to coat well (reserve any unused dressing). Taste and adjust seasonings. Chill for at least 1 hour; stir and serve. Makes 4 - 6 servings.
