Marino's Italian Barbecue

This great mix is made over an open fire, so it's perfect for camp outs.  Serve on soft rolls or hamburger buns.

Ingredients:

5 pounds sweet Italian sausage, casings removed
3 pounds round steak, chopped fine
2 1/2 pounds hot Italian sausage, casings removed
6 large green peppers, seeded and diced
8 plum tomatoes, cut into quarters
2 extra large Bermuda onions, diced
2 teaspoons garlic powder, or more to taste
1 teaspoon salt, or more to taste
1/2 teaspoon pepper, or more to taste
1/2 teaspoon dried oregano, or more to taste


Preparation:


Combine the ingredients in a very large frying pan (a 17" camping fry pan is good).  Season  with garlic powder, salt, pepper and oregano. Set pan over coals and cook, stirring often to prevent sticking. Cook until all the juices evaporate; about 1 hour (cooking times will vary according to how hot the fire is). Makes approximately 25 servings.
