Heat oil in a skillet over medium heat. Add the onion and saute for about 2 minutes, until soft. Add the garlic, stir and saute for 30 seconds. Add the tomatoes with juices and raise the heat to medium high. Stir together; then lower the heat to medium, cook for 15 - 20 minutes, stirring occasionally. Add salt and pepper to taste.
While the sauce is simmering, prepare the pasta al dente, according to package directions. Drain. Combine the cooked pasta with the sauce. Add the diced mozzarella and toss until slightly melted. Top with basil, if desired. Serves 6 - 8
