Smashed Potatoes with Parmigiano-Reggiano and Garlic

An easy and delicious approach to mashed potatoes.

Ingredients:

3 pounds Yukon Gold small potatoes
4 cloves garlic, peeled
1/2 cup freshly grated Parmigiano-Reggiano
1/4 cup COLAVITA Extra Virgin Olive Oil
Salt and  freshly ground pepper, to taste
3 tablespoon chopped chives


Preparation:


Place the unpeeled potatoes and garlic in a saucepan and cover completely with water.  Put over high heat, bring to a boil, then reduce heat and simmer until fork tender; drain.  Smash the potatoes and garlic together with a potato masher or a fork.  Fold in the Parmigiano-Reggiano and olive oil.  Season with salt and pepper and garnish with fresh chives.
