Polenta Rounds with Mushroom Ragout Topping

Follow the recipe for the Mushroom Ragout found here:  Mushroom Ragout with Rotini  - omitting the Rotini.
Ingredients:

1 box COLAVITA Instant Polenta
2 tablespoons COLAVITA Extra Virgin Olive Oil
1/4 teaspoon salt and pepper


Preparation:


Cook polenta according to package directions less 1/4 cup of water.  While the polenta is cooking add oil, salt and pepper. Immediately after it is done pour into a flat pan and spread it out to about 1/2 inch thick and allow to cool.  Polenta should be firm. Cut into circles or squares then grill or fry until lightly browned; add topping and serve.
