Filet of Fish with Linguine
Origin: Italian
Ingredients:

1 (28-ounce) can plum tomatoes, broken into pieces
1/4 cup COLAVITA Extra Virgin Olive Oil
1 large onion, halved and sliced
3 stalks celery, diced
1/3 cup green olives, sliced
1/3 cup chopped fresh parsley
2 tablespoons capers, drained and rinsed
Black pepper
1 pound fillet of flounder, or other firm white fish
1 pound COLAVITA Linguine, cooked according to package directions
1/4 cup grated Parmesan cheese
Dash cayenne, (optional)


Preparation:


In a large saucepan, simmer the tomatoes and olive oil together for 20 minutes. Add the onion, celery, olives, parsley, capers and pepper; simmer 10 minutes more.  Lay fish on top of simmering sauce; cook 10 minutes, or until the fish is cooked through.  Carefully remove the fish from the sauce; add linguine to sauce; toss to coat.  Put a portion of pasta on each plate, top with fish, sprinkle cheese over and a dash of cayenne, if desired.
