| Oatmeal Chicken Breasts |

| "The first time I met Whitney Houston was at Michael Jackson's Neverland Ranch. She came up to spend the day, and before we saddled our horses to ride into unknown territory on the ranch, we ate. Whitney requested fried chicken, so I prepared it with a different spin. Everyone loves fried chicken, but these days most of us are shying away from fried anything. Here's a recipe that will give you that same fried chicken flavor, without the frying, and I know you'll enjoy it as much as Whitney did." |
Ingredients:
2 tablespoons COLAVITA Extra Virgin Olive Oil 1/2 cup rolled oats 2 tablespoons dry bread crumbs 2 tablespoons blue corn flour* 2 eggs, beaten 4 skinless chicken breast halves, rinsed Salt and pepper, to taste

Preparation:
Preheat oven to 375 F (190 C). Pour olive oil into baking dish large enough to hold chicken in a single layer. Mix oatmeal, bread crumbs and corn flour in a large bowl. Put beaten eggs in another bowl. Sprinkle chicken with salt and pepper; coat with oat mixture, then dip into eggs, covering chicken well. Return chicken to the oat mixture once again and coat evenly. Place chicken in the baking dish. Bake 30 minutes or until chicken is browned.
