Chili Baked Chicken
"This is one of the easiest and delicious ways to bake chicken I've ever tried. It sounds like the recipe calls for way too much chili powder, but try it. I think you will be pleasantly surprised."
Ingredients:

1 (3 to 4 pound) chicken
2 tablespoons COLAVITA Extra Virgin Olive Oil, or as needed
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon Cavenders Greek Seasoning*
1/2 cup chili powder, or as needed


Preparation:


Heat oven to 350 degrees F.
Rinse the chicken under cold running water; pat dry with paper towels.  Rub the chicken with olive oil.  Combine the salt, pepper and Greek seasoning; rub all over the chicken.  Sprinkle very generously with chili powder (really coat it).  Place the chicken in a cast-iron skillet and put in oven.  Bake for 1 1/2 hours or until juices run clear. Serves 4 - 6

*Cooks Note: Cavenders Greek Season can be found in many supermarkets and on-line.  If you cannot find it, you can make your own.  In a small jar, combine:
2 teaspoons dried oregano
1 1/2 teaspoons onion powder
1 1/2 teaspoons garlic powder
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cornstarch
1 teaspoon beef flavored bouillon granules
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
Mix all together.  Makes 1/4 cup.  Cover and store in a cool dry place.
