Pasta and Ceci II
Origin: Italian
Ingredients:

1/4 cup COLAVITA Extra Virgin Olive Oil
1 clove garlic, minced
1 (14.5-ounce) can garbanzo (ceci) beans, drained
1 1/2 cups beef or chicken stock
1 pound COLAVITA Tubetettini or Ditalini Pasta, cooked according to package directions
4 tablespoons grated Parmesan cheese
Salt and pepper, to taste
2 tablespoons chopped parsley


Preparation:


In a saucepan or skillet, heat the oil over medium heat; add the garlic and saute for 1 minute; add stock; simmer 10 minutes.  Add pasta and heat through.  Remove from heat; stir in cheese.  Taste and adjust seasonings with salt and pepper. Serve in bowls, sprinkle with parsley. Makes 4 - 6 servings.
