In a saucepan or skillet, heat the oil over medium heat; add the garlic and saute for 1 minute; add stock; simmer 10 minutes. Add pasta and heat through. Remove from heat; stir in cheese. Taste and adjust seasonings with salt and pepper. Serve in bowls, sprinkle with parsley. Makes 4 - 6 servings.
