Pasta and Ceci I
Origin: Itialian
Ingredients:

2 tablespoons COLAVITA Extra Virgin Olive Oil
3 to 4 cloves garlic, minced
1 (14.5-ounce) can garbanzo (ceci) beans
1 (28-ounce) can crushed tomatoes
2 tablespoon fresh basil or oregano, or combination, chopped
1 cup water
1 pound COLAVITA Ditalini Pasta, cooked according to package directions
Freshly grated Parmesan cheese, optional


Preparation:


In a sauce pan heat the olive oil; add the garlic and saute for a few minutes.  Add the beans, tomatoes, water and herbs; simmer 1 hour.  Stir in ditalini, cook until heated through.  Serve in bowls, sprinkled with Parmesan cheese, if desired. Serves 4 - 6
