This sauce works well when tossed with a pasta that can hold onto it's small pieces of anchovy, such as Dal Raccolto's Strozzapreti or Fusilla Pugliese.
3 tablespoons COLAVITA Extra Virgin Olive Oil 2 tablespoons unsalted butter 1 garlic clove, minced 1 (2 ounce) tin anchovy fillet in oil (do not drain) 2 tablespoons chopped Italian parsley 1 teaspoon chopped fresh basil leaf Pepper, to taste 1 package Dal Raccolto Strozzapreti or other pasta, cooked according to package directions
Saute garlic in butter and oil; simmer for 5 minutes. Drain the oil from anchovies into saucepan. Chop anchovies; add to saucepan with parsley and basil; simmer 5 minutes. Season with pepper.
