Boiled Shrimp with Dipping Sauces

Everyone likes to eat shrimp, especially plump pink shrimp still warm from their seasoned poaching liquid. You can prepare any number of dipping sauces, including:
Green Sauce
Basil Pesto
Lemon Mayonnaise
Origin: Italian
Ingredients:

Kosher salt
1/2 lemon, stuck with 3 cloves
1 small onion, peeled and sliced thin
5 sprigs Italian parsley
10 peppercorns
1 pound large shrimp (about 16-20 per pound), peeled and deveined, tails left on
Lemon wedges


Preparation:


1. Heat a large pot of salted water to boiling and add the sliced lemon, sliced onion, parsley and peppercorns. Remove the pot from the heat. 2. Stir the shrimp into the water and let stand just until the shrimp are cooked through, about 3 minutes. Remove the shrimp to a serving platter with a slotted spoon. Place small bowls of one or more sauces on the serving platter and garnish with lemon wedges.
