Preparation:
Finely chop tomatoes, green pepper and cucumber. Remove green stems from scallions, and mince. Mix all ingredients into a large tureen, and add salt, pepper and/or hot sauce to taste. Chill and serve garnished with croutons, if desired. Serves 6-8.
