Tex-mex Gazpacho
This cold soup is a perfect accompaniment for Fourth of July barbecues and light summer meals. You can adjust quantities (and types) of vegetables based upon personal preferences.
Ingredients:

1/2 cup COLAVITA Extra Virgin Olive Oil
4 medium tomatoes
1/2 medium green pepper
1/2 medium cucumber, peeled
4-6 scallions
12 ounces V8® juice blend
32 ounces Bloody Mary mix
Tabasco sauce, salt and pepper to taste
croutons


Preparation:


Finely chop tomatoes, green pepper and cucumber. Remove green stems from scallions, and mince. Mix all ingredients into a large tureen, and add salt, pepper and/or hot sauce to taste. Chill and serve garnished with croutons, if desired. Serves 6-8.
