Basic Marinara Sauce
This is a basic but flavorful marinara sauce.  It should make enough sauce to cover 1 pound of pasta.  There are many ways to vary it; some are suggested below.
Origin: Italian
Ingredients:

3 to 4 tablespoons COLAVITA Extra Virgin Olive Oil
1 clove garlic, minced
1 (28-ounce) can plum tomatoes, crushed
1 tablespoon chopped fresh basil
1/2 teaspoon dried oregano
Salt and pepper, to taste


Preparation:


Lightly saute garlic in olive oil. Add crushed tomatoes, basil, oregano, salt and pepper, return to medium heat. Simmer for 30 minutes, adding a little water as needed.

Variation 1: Replace the basil and oregano with 3-4 tablespoons chopped parsley. Add a pinch of hot pepper flakes along with salt and pepper to crushed tomatoes, then simmer.
Variation 2: Finely chopped a small onion,  saute onion and garlic together in olive oil, add 1/2 cup wine to the tomatoes along with spices.
