Polpettone Ripieno (Stuffed Meat Loaf)
This is excellent cold and makes great sandwiches.

Ingredients:

For the Meatloaf
1 1/2 to 2 pounds lean ground beef
1 1/2 cups bread crumbs
1/2 cup Parmesan cheese
2 eggs, lightly beaten
1/2 cup water
2 cloves garlic, minced
1 tablespoon chopped Italian parsley
Salt and pepper, to taste

For the Stuffing
2 hardboiled eggs, sliced thin
1/4 pound salami, sliced thin
1/4 cup diced ham
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tablespoon chopped Italian parsley
1 clove garlic, minced

2 tablespoons COLAVITA Extra Virgin Olive Oil

1 (26-ounce) jar COLAVITA Marinara Sauce, or homemade

Special Equipment: waxed or parchment paper


Preparation:


In a large bowl mix together all meatloaf ingredients.  Mix well.  Pat the meat mixture onto a sheet of wax or parchment paper; to about 1 - inch thick.  Layer eggs, salami and ham; sprinkle with mozzarella, Parmesan, garlic and parsley.  Pick up wax paper and roll like a jelly roll.  Pat firmly and seal ends.  Heat oil in a large frying pan, brown loaf on all sides.  Meanwhile heat Marinara sauce in a large skillet.  Once meat is browned, lift gently and place in simmering sauce; cook slowly 30 - 45 minutes.  Remove meat from sauce, let sit 5 - 10 minutes, slice and serve with sauce.  Serves 8 - 10.

Variation: Bake the loaf in a 350 degree F oven for 1 hour or until cooked through.
