Shrove Tuesday Baked Fettuccine and Sausage

Ingredients:

1 pound COLAVITA Fettuccine
1 pound sweet Italian sausage
1 pound ricotta cheese
10 eggs, well beaten
1 cup grated Parmesan cheese
1 teaspoon coarse ground pepper
1 tablespoon COLAVITA Extra Virgin Olive Oil


Preparation:


Cook fettuccine al dente, rinse in cool water, drain and set aside. Broil sausage until cooked; slice in 1" pieces. In a large bowl, mix ricotta, eggs, Parmesan cheese and black pepper. Add sausage and cooked pasta, combine well. Preheat an oblong glass Pyrex dish; add oil. Pour in fettuccine mixture; bake at 350 degrees, 25-30 minutes until golden brown and eggs are set.  Serves 6 - 8
