Potato and Tuna Appetizer
Origin: Italian
Ingredients:

1 large russet potato, boiled and mashed
2 tablespoons chopped celery leaves
1/2 onion, finely minced
Salt and freshly ground pepper, to taste
1 can tuna, packed in water, drained and well flaked
1 egg, beaten
1/2 cup dry breadcrumbs
1/4 cup COLAVITA Extra Virgin Olive Oil, or as needed


Preparation:


In a bowl combine the mashed potato, celery leaves, onion, tuna, salt and pepper.  Mix well.  Shape into balls, dip each ball into the egg and then roll in the breadcrumbs.  Fry in hot oil until browned.  Drain and serve.  Makes 4 servings
