Artichoke Pie
Serve this tasty pie as a part of the antipasto course, or as a first course.  Adding a green salad,  makes it a great brunch or lunch dish as well.

Ingredients:

1 package frozen artichoke hearts, cooked, cooled and chopped
4 eggs, beaten
1/2 pound mozzarella, shredded
1/2 cup grated Parmesan or Romano cheese
Salt and pepper, optional
1 (9 inch) frozen pie shell, thawed


Preparation:


Combine the cooled artichoke hearts, eggs and cheeses in a large bowl; mix well adding salt and pepper, if desired.  Pour into the pie shell and bake at 375 degrees F. for 45 - 60 minutes, or until set.  Allow to cool for 10 - 15 minutes before slicing.  Makes 6 - 8 Servings.
