Colavita's Breakfast Treat

This recipe is great any time of day!

Ingredients:

1/2 cup dried cranberries or raisins
1/2 cup chopped nuts (your favorite)
3/4 cup Grape Nuts cereal
1/4 cup wheat germ
1/2 cup coconut flakes
1/2 cup white chocolate chips 
1 cup water
1/2 cup COLAVITA Polenta or any ready to cook corn meal
Pinch of salt
2 teaspoons COLAVITA Extra Virgin Olive Oil


Preparation:


Mix first six ingredients in a bowl.  Bring water to a boil; add salt, polenta and oil. Stir until well blended (3 to 5 minutes). Add cooked polenta to the dry ingredients; mix well.  Transfer to a dish with a rim; spread 1/2 inch thick.  Allow to cool (the mixture will hold together as it cools). Cut into wedges or squares.

If you would like it a little sweeter, sprinkle extra chocolate chips on top. Chips will melt as snack cools.
