This bright and colorful pasta salad has been added to our recipe archive in memory of Louis Szoke, a respected and outstanding employee of Colavita USA who will always be remembered for his wittiness and for the care he put forth in all he did for the company and for his fellow employees. Lou developed this recipe to deliciously demonstrate the use of a wide variety of fine Colavita products. He used it at many supermarket openings and it was always well received. It has become a Colavita favorite and can be made adding different ingredients. Use your imagination, you will love the results.

1 pound COLAVITA Tri-Color Pasta 1/2 pound cherry tomatoes. halved 1 container COLAVITA Cracked Olives, sliced if desired 1 small jar Pimentos or COLAVITA Roasted Peppers, drained and sliced thin
For the dressing: 1/2 teaspoon dried oregano or Italian seasonings 1 clove fresh garlic 1/4 cup COLAVITA White Balsamic Vinegar 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 cup COLAVITA Extra Virgin Olive Oil
Cook pasta according to package directions.While pasta is cooking, place all ingredients in a large bowl.When pasta is done, rinse in cold water, drain well and add to the bowl.Mix well. Make dressing by adding all the ingredients, except for oil, in a blender or food processor.Blend until smooth and slowly add the oil until it is well blended.Pour into the pasta mixture and mix well.Allow pasta to sit for at least an hour before serving to blend all of the flavors.
