Broccoli Di Rape

Broccoli di rape is a slightly bitter leafy vegetable, commonly  used in Italy.  While broccolini or broccoli can be substituted in this recipe, they are not the same.  This great vegetable dish doesn't need much more than some crusty Italian bread and a glass of great wine.

Ingredients:

1 bunch broccoli di rape
1/4 cup COLAVITA Extra Virgin Olive Oil
2 cloves garlic, sliced or chopped
1/4 teaspoon crushed red pepper 
salt, to taste


Preparation:


Wash broccoli di rape, remove ends or peel them. At this point you may either choose to boil the broccoli in salted water prior to being sauteed (as it is done traditionally) or to saute them raw (which will result in a  crisper vegetable).  Either method works well.

To pre-boil: Bring water to a boil in a large sauce pan; add a large pinch of salt and the broccoli di rape.  Simmer for about 5 minutes, or until tender.  Drain well.

In a saute pan set over medium heat; add oil, garlic and crushed red pepper.  Saute until the garlic begins to turn golden (do not burn).  Add the broccoli di rape; saute for 10 minutes if pre-boiled, longer if raw.
