Preparation:
In a mixing bowl sift together flour, 1/2 cup powdered sugar, almond meal, baking soda and pinch of salt. In a separate bowl, stir together olive oil and almond extract; stir into dry ingredients until it forms a sticky dough. Divide dough in half; wrap in plastic wrap. Chill several hours or overnight. When ready to bake; preheat oven to 350 degrees F. Make marble sized balls and divide over 2 baking sheets. Flatten each cookie slightly. Bake about 15 minutes or until golden brown and baked through. Let cookies cool on the baking pan for 5 minutes then remove to cooling rack. When at room temperature, roll cookies gently in remaining powdered sugar. Yields: about 40 cookies
