Sausage Bread

Ingredients:

1 1/2 pounds Italian style pork sausage
8 ounces mozzarella cheese, cubed
1/2 cup grated Parmesan cheese
1 pound pizza or bread dough
1 whole egg
1 egg, separated (set yolk aside for brushing on the dough)
2 teaspoons minced parsley
1/4 teaspoon dried oregano
Salt and freshly ground pepper, to taste


Preparation:


Cook sausage in frying pan;  drain well. In a large bowl, combine the sausage, mozzarella, Parmesan, egg and egg white; mix well.  Add the parsley, oregano and salt and pepper, to taste.  Set aside.  On a lightly floured surface, roll the dough into a circle.  Spread the sausage mixture on top to within 1" of edge. Roll up like a jelly roll, pinch the edge well; place on cookie sheet. Brush top lightly with beaten egg yolk.  Bake at 350 degrees F for 45 minutes or until golden brown.  Set on wire rack to cool slightly.  Serve warm or at room temperature.
