Orzo Tabouleh
I have mint growing in my garden and enjoy finding different ways to use them. This is my favorite pasta salad.
Ingredients:

8 ounces cooked orzo
1 cup chopped tomato
1 cup chopped cucumber
1/2 cup chopped green onion (include some tops)
1 cup chopped parsley
1/4 cup snipped fresh mint
1/2 cup COLAVITA Extra Virgin Olive Oil
3 tablespoons COLAVITA Balsamic Vinegar
1/2 teaspoon garlic powder
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
Pinch of sugar
Mint leaves (optional, for garnish)


Preparation:


Combine salad ingredients in 3 quart mixing bowl. Mix dressing ingredients together and pour over salad. Stir to combine. Cover and refrigerate at least an hour or two to blend flavors. Garnish with mint leaves and serve.
